The Cafe and Pastry Fürst is famous for having created the famous chocolates called "Original Salzburger Mozartkugel" (Mozart balls), created in 1890 by the Salzburg pastry chef Paul Fürst.

History

Paul Fürst (1856-1941) opened a candy shop at Brodgasse 13 on Salzburg's Alter Markt market square in 1884. This shop quickly became popular with Salzburg's trendy people.

His opening announcement stated: "Drawing on years of experience in the most renowned confectionery workshops in Vienna, Pest, Paris, Nice and many others, he will endeavor to offer the best and the latest ..." And indeed, Paul Fürst he brought the art of packaging from the metropolises of the world to Salzburg and in 1890, after numerous experiments, he created a chocolate which he called "Mozartkugel". He chose the name Mozartkugel to pay homage to the Wolfgang Amadeus Mozart in Salzburg, which was not as popular at the time as it is today. It was the quality of the new specialty and its delicate taste that made the Mozartkugel such a great success, so much so that in 1905 Paul Fürst received a gold medal for his famous packaging at a fair in Paris.

These famous chocolates are made from marzipan with pistachios, nougat and dark chocolate and had to be characterized by its perfectly round shape. Each individual bonbon was placed on a wooden stick before being dipped in chocolate.

More than 125 years after their creation, Paul Fürst's "Original Salzburger Mozartkugel" are still expertly made by hand at Konditorei Fürst according to the original traditional recipe.
