Relais il Palmento History
Il Palmento is a charming 5-star Relais consisting of 33 trulli, built between 1780 and 1820, at the time called “jazzile Sabatelli”, entirely fenced with dry-stone walls and railing, with a total surface area of approximately 20,000 square meters, recovered and restored under the careful control of the "Museums, cultural heritage and historical archives" sector of the Puglia Region Tourism Department.
The Relais takes its name from the typical trullo where, during the grape harvest, the pressing of the grapes harvested in the vineyards belonging to the village took place; the resulting must passed into the cistern below and was subsequently placed for fermentation in large jars ("capasoni"), clay containers similar to large jars.
With the renovation in the Palmento a Club House has been created with a bar where tastings of typical local products (dairy products, oil, wines) and 12 splendid residences equipped with every comfort are organized.
Every ancient housing unit today is a "Suite" and takes the name of a native vine (Primitivo, Negroamaro, Fiano, Trebbiano, Bianco d'Alessano, Moscato Selvatico, Pampanuto, Verdeca, Malvasia, Moscato Bianco, Aglianico and Garganica) further sign left from the past, remembering the ancient wine route.
Inside the Borgo there is the characteristic restaurant with the typical barrel vault, made of local limestone, which, with the care and elegance of the furnishings, creates suggestive atmospheres suitable for every occasion.
Here the refinement and the genuineness of the products linked to the Apulian land, the respect of the most ancient traditions of the kitchen, are harmoniously combined with modern and international reinterpretations, all accompanied by a prestigious selection of wines.
